This course will discuss the role of dietary antioxidants and pro-oxidants on the pathogenesis of degenerative diseases at molecular, cellular and whole body level. The balance of pro-oxidants-antioxidants on free radical generation, lipid peroxidation, protein oxidation, DNA damage and cell injury will be reviewed in the context of chronic and acute diseases such as cardiovascular disease, cancer, diabetes, arthritis, Alzheimer's disease. This course emphasizes the role of dietary antioxidant vitamins E and C, carotenoids, polyphenols, selenium, iron, zinc and copper on oxidative stress and antioxidant defense mechanisms.
